I put ketchup, mustard, onions, chili, jalapeños, cheese and spicy sweet pickle relish.

Shredded cheese under the dog always
Regular dog: top with mayo, mustard, jalapenos

I am usually a mustard only, or a chili cheese onions only guy.
That said, I wanted a hot dog the other day, and realized I was out of mustard and chili, so I threw some sriracha mayo on there.....so damn good

This is the only civilized way to eat a hotdog. Though you’ll also want to add a slice of cheese as well of course. But that goes without saying.
