If it could be ANY concert, for me it would be May 7, 1824, at am Kärntnertor Theater in Vienna to hear Beethoven's Ninth Symphony performed for the first time.
The old deaf guy was THE rock star of his time.
Modern concerts? I think I'd like to see Pink Floyd at the Superdome on May 14, 1994 once more. Maybe earlier tours by Floyd would appeal to many, but the catalog of music was a bit larger in '94, and it was a killer show.

I made plans to go see Prince at Essence Festival and Tom Petty at Jazz Fest a few years apart and skipped both.
After Tom Petty died, "I'll catch them next time" stopped being a thing for me.

Harry Chapin under a tent. The intimacy and genuineness of him in that setting was just the best.

Me and a buddy of mine had tickets to see Killswitch Engage when Howard Jones was the singer but the show got canceled because of a snowstorm. Howard left the band soon after. I had a ticket to see Body Count that got canceled by Covid.
Frank Sinatra at the Sands with the Count Basie Orchestra is high on my list of shows I would have loved to see.
