If we can pick our gender can we pick our race and age also?

I've decided I want to be a 25 year old Asian male. I'm actually a white male much older than that but I do identify with being younger and want to be Asian.
If I can't do that please explain in detail why I can't.
If I need to go to the bathroom badly at a public place and the Men's room is occupied can I quickly identify as female and use the Women's restroom? If not explain detail why this would be unacceptable.
Does paperwork need to be filled out and submitted if I want to be identified as a different gender or can I just proclaim I identify as female and that's it?
If you have to be 21 or older to rent a car why can't an 18 year old who can fight in the armed forces identify as being over 21 because they have decided they feel more mature than 18?
If you are denying anyone the right to pick their age or their race are you not infringing on their rights to do so?
Why is it just limited to gender only? I want to be a different race. I might want to be black later. Are you saying because of the pigment of my skin that locks me into what race I am? Is race biological?
Even if it is why can't I change race?
Sex is biological and they can change their gender. I want to change my race now. Tell me why in explicit detail how the three (age, sex, race) are different.
I'll hang up and listen.
