The only "Cajun" places in Houston that are successful are one's that put a twist on Cajun cuisine. For some reason, people really don't flock to real cajun food here.
Moselle's was great and easily the best cajun food I've had in Houston, but they didn't last a year. Beaucoup was good, but they closed up shop as well. Cajun Stop (Calliope) is a shell of it's former self. I've been underwhelmed the last couple times I've gone. These were all legit Cajun restaurants with recipes and ingredients sourced from Louisiana.
The places that make it are Liberty Kitchen, BB's, etc. They're more trendy spots that put their own twist on cajun food and it seems to do well.
Also, since we're on this topic...BB's gets Leidenhiemer bread overnighted, got their recipes/seasoning from several NOLA restaurants, and tries to source their seafood from Louisiana. Even with all that, the NOLA/Cajun experts claim that their poboys suck. It's not a great poboy, but if that same poboy was made in Louisiana, there would be a totally different opinion.

Roux Pour in Sugar Land has some awesome cajun food. Owner is from NOLa and you can tell. Like most have said, the great cajun restaurants are not as abundant as in Louisiana; however, using that as a metric for the industry is akin to saying Italy doesn't have a good food scene because they don't have as many french restaurants as France.

Baton Rouge is between New Orleans and Lafayette and is just as bad or worse at Cajun than Houston

Houston has a ton of transplants from louisiana, is 4 hours from BR, 3 from ull, and 2 hours from Louisiana
With the huge lsu base, it is a bit surprising

Roux Pour is good in Sugar Land.
Heck, Even Floyd's isn't that bad of a lunch when compared to Ragin Cajun.

I live in Houston and would not consider it a good food city but I'm from New Orleans.
I have always been disappointed that one of the largest cities in the US lacks original resturaunts. Most returnaunts are a chain and boring.
