I would go with a Yugo.

My only issue with the 911T is that it's a whole lot of money for not much power. It is a very attractive option though.

New, 3 pedal car at that price point simply means 911 T. The 718 Cayman 4.0 GTS fits the bill as well but they are done. The new Cayman is still a ways out and they have confirmed an ICE version now.
You have a lot of options (non-poverty spec 911 T will be $175k or so), but the options are used or lowering the budget, easy to do, but the 911 is a car that any serious car enthusiast should own if they can. It is like anything in life you love, if you get a chance to own the benchmark, it is always a good idea, if nothing else for the perspective it gives. Also, be aware that they are very reliable, but they don't like deferred maintenance, just like every German car. If you don't have a spend history with the dealer it may be a wait for an allocation maybe 6-12 months (I don't follow the T very closely) but you might find one on a lot but it will probably be overspecced. Speccing a 911 is a fun but frustrating at times proposition, especially the first one. Spend some time on the dedicated Porsche forums to determine what you should or should not spec.
There is really nothing like a 911 because there is nothing like a 911 when it comes to chassis dynamics. It shouldn't be able to do what it does, but it do.

Great cars for those that appreciate form, speed and handling. Had a 911 Turbo cab and just got a 911 Carerra 4 GTS cab. Incredible car. Already have the big diesel 4x but unlike most, the truck goes in the woods and the mud. It’s not for show.

That would have been high on my list of suggestions, but he said no BMWs. Plus specced the M2 would be $100k cheaper than the 911 C T. Plus you can add 300hp to the S58 in the G87 for not a lot of money, but based on the OP he would be fine with the stock almost 500hp.
