A few years back I was drinking at the bar of a place in Dallas that was on DD&D and asked the owner about it. He said Guy was cool as shite and they went to dinner the night after taping his restaurant and Guy and him had some beers and just talked life.

What’s odd about celebrities in the US is that they have managed to brainwash us somehow. If they are nice, it is an exceptional thing. Whereas if they are assholes, we somehow accept it.
Think about it, these fricks have it all. Fame, lifestyle of kings, money out the arse, women (or men or whatever) to bang as they choose and yet the vast majority are somehow self-righteous asshats that treat others like shite. Give me that lifestyle and I would be the nicest happiest person on Earth. You know who has the right to be a pissed off A hole? The garbage man. That guy gets a pass for being a dick.

A lot of other food people hate him because he doesn't treat the gourmet stuff like it is life and death. The New York Times gave his restaurant the worst review ever and it seemed personal rather than anything else.
He has fun and is a goof but talking to people whose restaurants he has visited he is a damn good guy. He got a lot of inspiration from a critic out in LA who never talked about what was bad only what was good. He gets a kick out of finding a hole in the wall and getting some money in people's pockets. There are mom and pop restaurants whose business he has more than doubled.
Yeah, his restaurants have a bit of a tourist place feel but so what. Don't go there. He treats people well, didn't dump his wife and kids when he hit the big time like a lot of other celebrity chefs and has always done charity work.
