I'd rather eat the food I cook than most restaurants. Especially those in touristy areas.

And who stays in the same place for a week or more without cleaning?

If I'm at a condo, VRBO, or ABNB then it's expected to clean, and I wanted a full kitchen so I could cook. Especially with younger kids depending on what the vacation plans are it's way less stressful as parents of toddlers to eat in vs dining out. If older kids, teens, or just parents I agree with you to a point, but a tired toddler at a restaurant after a day or days at the beach, touristy mountain town, or theme park?! F that.

Who does the packing?
We both do

Loading?
He usually puts the heavier stuff in, I'll load the inside of the car

Driving?
He likes to drive so he's usually driving, but if it gets over 6 hours we'll usually split it up

Grocery Shopping?
Both of us

Cooking?
Mostly me. We eat out quite a bit on vacation and try to keep stuff back at the hotel that's easy to throw together

Cleaning while on vacay?
Everybody picks up after themselves. When the step-kid was younger, we both pitched in to help with her stuff. She's 16 now so she's picking up after herself and helping out with all of the other stuff.

She packs, because otherwise there will be 10 pairs of underwear per person and no pants.
You load, drive, and clean. If you want it done right, do it yourself.
You both cook and grocery shop. Push the buggy and make sure the kids don't cry.

Generally speaking:

Who does the packing? Both
Loading? Dad
Driving? Dad
Grocery Shopping? Mom
Cooking? Mom (dad for grilling)
Cleaning while on vacay? Both, but probably mostly mom

This is going to change from family-to-family though. For example, my FIL has poor health so my MIL does the driving and a lot of the packing. My wife has far better spatial reasoning than I do so she arranges as I load the vehicle. One of my BIL loves to cook so he's more likely to be the one grocery shopping and cooking in their family. Etc.
