Not for those of us that need to let the revs settle first. And it takes one more start off the life of your starter and engine.

No, never.

The logic behind it is that your ignition coils and wires can arc in a fume cloud and blow everyone up. So, you're going to start the car In a fume cloud meaning you now engaged a high current electric motor and then the ignition system anyway.

Leaving it running is no more dangerous than stopping and starting it from an explosion hazard perspective. It may encourage car jacking though, so keep that in mind.

I've been driving for 30 years and the only time I turn the truck off is if I'm going inside the store to buy something.

I do, but not because I'm worried about blowing up. I just don't like the idea of giving roguish arse people any more chances than I have to.

It's not about being in a hurry at all. There's no reason to turn any vehicle off while pumping. Only stupid people believe there is a big risk. If anything is going to happen, it's a static discharge at the nozzle where vapors are escaping or if someone is dumb enough to have an open flame near the nozzle while pumping.

Vapors are probably more prevalent while it's running.

I don't know, I wouldn't know because I'm not a trashy smoker that needs to worry about such things.

I just know there's no reason to turn off my car while refueling.

Yes, because the most likely thing that could happen is you get a check engine light if the timing is right, EVAP system might register atmospheric pressure, nothing serious.

Obviously clearing a code is not that hard, but still have to go through the motions

In theroy they could be worse if your vehicle has leaks.

The whole "turn off your car or explode" thing is archaic, from back when everyone had fricked up plug wires, fill nozzles with no fume hood, fuel tanks vented through the cap, etc

From an explosion risk perspective, it is exceptionally unlikely that leaving your engine running is increasing the risk at all. The risk is far higher from a static arc, cig lighter, etc. Engine running or not has no bearing on any of that.
