I don't and had actually never heard of this, but now I'm hearing you have to. Is this true?

no you dont "have to" but when you leave it with a full tank and somewhere along the line the knob gets bumped or something leans against it so it lets gas escape and you come back days later to find it empty on a holiday, when its too late to get a refill, that is when you will understand why smart people shut off the valve to the tank to prevent that from happening

I leave it wide open and my burners unlit but full on. Then I close the lid and come back twenty minutes later to start smoking cigarettes.
