Long time bartender here - 20% is very acceptable. Someone tips me 25% I'd like to give them the tip.

I tip 20% of the grand total(with tax).
Example:
45.79 total.
in My head I do this: move decimal left once, double that, round up to next $. $10 tip.
easy for my brain in about 3 seconds, but not the gf's.

We do double the tax. Around here that puts the tip just under 20% of pre-tax cost. I round it up for good service and round down for so-so, and deduct a dollar or so for bad.
Never ding them on the tip for bad food/kitchen mistakes; only for stuff they control.

It ain't mandatory to tip shite, baw. 25 to 28 percent is what I tip for "good" service. Excellent service might get closer to 30%.

10 to 12 percent is for bad service - I rarely do this. If I think service is slow and within the server's control, but not bad, I'm probably in the 15% range.

I double the tax so the answer is no I don't tip on the tax. Just cause Uncle Sam is stealing my money doesn't mean you get a cut of it.

That's a good point about beverages.
We don't tip bartenders as much for drinks as we do waiters for food.
A $5 beer we give a dollar, or a dollar every other.
A mixed drink that's $8-10 is still a dollar.
So do I remove the alcohol amount from the waiters check and just tip on food on the bill, and leave cash for the drink tip?

If service was great then I probably had a lot more to drink and eat so there is no need to increase the percentage beyond 20%...the base increased dramatically.

The prices at restaurants & bars have increased significantly over recent years. 15-20% today is more than the 15-20% they were getting 5 or 10 years ago for the same work. Servers get a cost of living raise every time the prices on the menu go up.
