I never got that feel. I always assumed that she was to be seen as the woman who cooks the chicken, to go along with the whole Louisiana Kitchen feel.

Worked up there for a few years... 2008-2010 or so. Went there from lunch from time to time and always had good service.

This. That white CEO was on Undercover Boss(a TV show). They never hid the fact that she is CEO or implied the black lady is.
