I remember the lemon car....from the story I remember, he bought the car from JP Thibodeaux and it was a lemon and they wouldnt take it back or exchange it so he put it on full display

No, it was Schoeffler Cadillac. My BIL is part of that family. We laugh about it all the time. The car didn't qualify for the lemon law and he wouldn't allow Cadillac to fix it.

Know the family well. My dad worked for them for about a decade and left before the shitstorm. Went to school and grew up with some of the younger family members. Some of the Knight kids were awesome, some of them were very spoiled and entitled.

I was told that one of his kids was a “marginal” athlete so Mark paid for 2 turf fields for STM to ensure his son would have a spot on the football team

She owns the Franchise rights. There's a few other businesses owned by the siblings. She came out pretty normal compared to her dad.

There were dozens of families with similar paths in Lafayette. Too much money, coke, alcohol, whoers, divorces were the common denominators in fuked up families.

I thought Mark owned the SK's on Amb Caff and in Youngsville ? Maybe he was the private investor with his daughter listed as the Pres/CEO.
Back in the day (1990's), I use to hang out at Dave's Gun Shop and Eddy Knight would come in all the time. One year he went to the Tulsa Gun Show and bought 50+ guns as Christmas gifts for his family, employees, and good customers. Because he didn't want to fly back with them, he paid a friend of mine $500 to drive back from Tulsa in Eddy's red Cadillac stuffed full of all the guns

nope, that is not how that happened at all
there was a push to build a stadium at STM, the Knights were one of the big donor families. As a part of the business plan for building the stadium there were some academic and spiritual facility expansions planned as well. Additional Classrooms, money for the Library, a chapel, etc
Four of the big donor families banded together and offered to put in a field turf surface for the Stadium because on of the angles used to pitch the stadium was using it as a central Owner Parish facility for Jr High Football, Soccer, STM Marching Band, STM Soccer etc. The field upkeep would fall on the STM Coaches and the additional usage would tear it up. A conventional Grass field was installed in the new STM stadium.
That year in the 2004 Football Semi-Finals, Keiland Williams of Northside HS practically single-handedly beat STM on their grass field in their new stadium. Heavy rains during pre-game and a light rain during the game turned into a giant mud pit. The mud made it practically impossible for STM to pass the football, but Keiland was overwhelming. The Four big donor families lead by Mark Knight pushed VERY HARD for field turf to be installed.
Monsignor Richard Mouton of St Pius X said no to the field turf, he and the STM Board felt it would look bad. So Knight/Moody/Et al said, no field turf, no money for capital campaign
the Monsignor and the Diocese bent the knee and allowed the field turf to be put in. Turns out it was an incredibly wise investment because the turf paid for itself many times over.
