Chicken is relatively cheap. Chicken and some rice - quality meal.

Inconceivable. I've been assured it is too expensive to eat healthy and that poor people are fat because they are forced to eat fast food.

That's what I was thinking, we pick up the 10lb bags of leg quarters when they go on sale, lately that's been ~$5. Give me a bag of leg quarters, a few onions, a bag of rice and I can crank out a huge pot of rice and gravy or chicken stew that could last a while.
We try to keep grocery cost ~$100/week as a family of 4(2 small kids) and usually are right around that number. We buy proteins when they go on sale, usually in bulk, then separate/vacuum seal to use later.

This has proven to be false time and time again. Healthy food is cheaper than unhealthy food in almost every instance.
You can compare lean ground beef, rice and beans to a processed meal or junk food and it's way cheaper.

People underestimate potatoes. Entire countries have survived decades almost exclusively on potatoes.

while you can grow herbs in pots, spices (even black pepper) can cost some $$$.
I don't see any garlic nor peppers in that basket, but then again, you can grow them in your yard or even in a pot.
The lack of animal protein (meats, eggs, and dairy) would be difficult for many of us but then again, it can be done.
ETA: she did have onions there. beans can be awfully dull without onions, garlic, bell pepper, hot pepper, et al.

My first 6 months out of college I had a crappy warehouse job while I struggled to get a real job. I had to do something similar. After all my expenses, i literally had about $50 to live off of weekly.
$25 goes into my tank, $25 groceries for eating.
It was a depressing way to live, with zero room for fun activities. Eating the same basic foods everyday absolutely sucks. But it was doable also.
This was also in 2016, so groceries are much higher now. I'm not so sure I would be able to manage the same today.

True but you can get around 5lbs of chicken breast for around $12. So for $24 you can do the same thing while adding an additional 3700 calories and 700g of protein

^this right here I could sustain if I had to. A dozen eggs and a family pack of pork chops or maybe a whole chicken and you would be around $20. Oh and I'd substitute the lentils for red or white beans. And I know you can get giant bags of frozen veggies for about $5. Hell, I might try and do a cajun version of this and make my own yewtewb channel. I bet my stuff would taste better than hers.
Btw, I couldn't help noticing that her voice was kinda shaky and I kept thinking she might have borderline Tourette syndrome and I was waiting for her to blurt out some profanities. That would have made the video more entertaining. "Cooking and cursing on a budget" with Tourette Lady
