We were getting 1.75 at the dock just 2 weeks ago for straight run selects. Most were going to processing plants but it is what it is.

Just to level set, to those who hate dusting, it means not seasoning the water and seasoning the cooked crawfish after dumping?

Or does it mean cooking basically the same way and throwing some extra seasoning on at the end?

Definitely know some coon asses in Lafayette area who make some bomb arse crawfish dusting and steaming in cooler. I soak but it’s good both ways

This one. It's only extra after they're boiled with seasoning. The other one where there's no seasoning in the water is some Texas bullshite.

The water is seasoned (though maybe not quite as much as you would season if you weren't dusting)

Wow. I thought dusting was a crap tradition here in Lake Charles. Dusting is terrible.

You don’t soak your crawfish to finish cooking them?

Bring to a rolling boil for 3 minutes, turn fire off and let soak for 25-30 minutes. Dump ice on them half way through the soak.

Alexandria. The Jungle would serve us beer all night when we were 16 or so. We ate the dusted bugs and had a blast.

You dumb son of a bitch. I had 2 customers who went through about 150k pounds a week between the two of them. I’d say they make a few bucks boiling. You know what neither of them did? Dust fricking crawfish. Because it’s stupid and provides a lower quality product. But both of them also use steam and soak in a lukewarm pot of seasoning, so it is the same every time. Take your “volumes of crawfish” and your 100 quart pot you are boiling in and blow smoke up someone else’s arse.

bring to boil-shut down---soak (the ice works for some people but dilutes the water and puts to much water in if doing another boil in same pot)....sprinkle some powder on top in ice chest and shake chest..let rest

dusting is a texas restaurant thing ...
papadeauxs does this and they are not good

all about the water and soak... dusting is just fo extra kick while taking shells off...

You gotta soak the crawfish but I don't mind some dusting on the outside either. Gives me some extra flavor when sucking heads and eating claws.
