Most dusters don't know WTF they are doing.

To dust correctly the dust has to be distributed onto the crawfish as they are going from the pot into the ice chest. Dusting the crawfish after they are already in the ice chest is dumb.

You also have to mix the dust into the crawfish in the ice chest. This takes two people shaking the ice chest to do it best.

Also the last, but maybe most important thing, is DON'T OVER BOIL THE CRAWFISH....because they will continue cooking some in the ice chest.

If done correctly this method make the best crawfish....now you still put seasoning in the water but this adds to the flavor.

I’ve paid for more more catered company crawfish boils in the past 25 years and if anyone ever dusted their crawfish they’re no longer in business

Without knowing which restaurants you went to I'd guess that you probably have.

BUT the best restaurants in Acadiana (by far better crawfish than anywhere in NOLA or BR) all dust....like I described above.

Crawfish aren't caught in the swamp, baw. They're caught in the fallow rice fields of God's country, the cajun prairie. People who eat spillway crawfish have no right to speak on the boil. That's like a protestant telling a Catholic about religion.

I’m not excited, I guess more surprised coach O picked dusting and Jordy thought coach O was 100% on his side. I never heard of that and I don’t ever want to try dusting. I side with Jordy on this.

All of this...people that fish from or eat crawfish from the Basin have no room to be discussing the quality/edibility/tastiness/whatever of crawfish.

The spillway, swamp and marsh are the only places that produced crawfish this season. The ponds closed up shop early.

As a former BR baw I know it is hard to admit and I'm sure you won't.....but there ain't anywhere in BR where you can get better crawfish that Hawk's in Robert's Cove and they dust.

Mid-June ain't early baw.

Not to mention the damn Basin baws were complaining like crazy that they didn't get that Rona money....I wonder why if they were all doing so great.

Nope, I won't admit it because I have never been there. I've had dusted crawfish once and never will again.
