Are you familiar with the dining industry, to use just one example?

To take just one sub-example, specialty coffee places that charged more than the $0.50 cup you could get at your local diner were somewhat rare 25 years ago. They're all over the place now. I'm not saying this express example in your OP will somehow survive, but to say that novel or trendy places never stick around is not true.

That's the best kind if its done right. There was a place i use to go to that did this, and the sammiches were awesome.

That's what I thought we were talking about. I was curious what trendy dining places have survived for long time (not disagreeing with you or saying this place will or wont survive).

ETA eating establishments. Not Coffee Call and all the coffe shops that came after them. I mean actual restaurants.

What's crazy about the truth of this is, people flock to BK, McDonalds, etc.... These are basically shite stains in regards to food product and quality. But good niche places that are really good, don't last. McDonalds, BK etc are basically roaches. They survive anything.

Agreed. I was trying to think of a good niche place that wasn't a shithole burger joint and really couldn't come up with anything. I guess you could say chik-fil-a since all they do is chicken, no burgers or other stuff. Chicken isn't as niche as chicken salad but it's still a limited menu.

how long has Crispy Catch been opened? I just noticed it Saturday while driving.


i'm not arguing, I just think about places like Semolinas, Giovannis, Houston's etc. that were hot at one time but eventually closed. Thats how I view CSC or a place like Newks. The novelty will wear off and they'll close. But in the meantime, they'll be popular and make a killing.
