Love his recipes. Have his After the Hunt cookbook and use his gumbo recipe exclusively.
Don’t know him personally but I trust his recipes.
Also use his Sensation salad dressing recipe. Simple and tasty

I was in the equipment sales side of the restaurant industry for several years.
You just described almost all of my customers. I dont know what it is about being a chef but most of them have an abrasive personality and big egos.
As for Folse, I have never heard anything bad until this thread, but I have no experience with him other then dining at his restaurants.
