I guess they could just have runners grab stuff for you.
Though I'm sure the few people working buffets might not be enough to serve the dining room without hiring more.

Yeah, just seems like a lot of those places run on skinny margins and not a lot of labor.
Adding a few lunch ladies to cover a buffet probably drives up the cost to the point where it's not worth it.
