Typically a superior that emails at those times does not reasonably expect a response right then but just make it a practice to check your emails and respond to them when you get up and are ready for the day. Just be reasonable, it’s not that hard.

“Missed” emails. You keep saying that. I’m trying to make the point that emails aren’t like phone calls. You don’t miss them, you just ignore them. You couldn’t respond first thing Monday morning?
And if your boss wants you to respond to them then, yes you are beholden.

Nah. That's fricked. My weekends and every waking moment don't belong to my employer just because he pays me a salary. I'm entitled to a life outside of work.

If you are an hourly worker, then keep a record of all the time you spend answering and reading emails. Then, if you are fired, pop them with an overtime/wage claim for that work.

I would tell him because I put my phone on silent when I go to bed so emails at 12:30 don't wake me up.
I don't give a shite if it's a company phone or not you shouldn't be required to answer it at ridiculous hours of the night.
Or you could just use the old line that you were somewhere with shitty service.

I side with your boss here, it doesn't matter when an email arrives lol. They go to the top of your inbox as unread, pretty damn simple. How are you missing them? There's no excuse for a missed email?
If your boss is telling you that you should have responded before Monday morning, that's different. But if he is wondering why you haven't responded by Tuesday on an email sent Saturday that's on you.

I didn’t say every waking moment. And frankly responding first thing Monday AM would most likely be what the boss wanted.

If he has O365, which is microsofts newest shitty Outlook platorm, it's very easy to miss emails when you are using mobile devices. Instead of it delivering each individual email, they have them all threaded in one email.
Its sort of hard to explain.
-Boss sends 1230 email.
-Person A replies to it a few hours later.
-Person B replies a few hours after that.
-OP looks at his phone, it only shows an email from Person B. It doesn't show boss's email or Person A's email, unless he opens the email from person B, and read through the whole chain to see the others. To make matters worse, if he open the email from Person B, decides it doesn't pertain to him, and closes it out before scrolling down, it will mark those other emails as read. So Monday morning he gets to his desktop version, those emails from over the weekend don't even pop up in unread emails.

This. It's not really a difficult topic to argue over if he is wondering why you haven't responded by Tuesday. If the question is why you didn't respond at before sunup on a Sunday (or any day for that matter), then, yeah, your boss sounds like a dick. I don't think any company should expect employees to set up their phone to wake them up in the middle of the night for an email. That sounds like a recipe for terrible sleep cycles.

I work in a 24/7 365 industry......time is money....If I miss a call or email over the weekend that could cost me a lot of money......

They are absolutely missed if you're not making a habit on Monday morning to double and triple check emails from Saturday and Sunday.
I'm making the argument that you shouldn't send important correspondence after business hours and especially not when you're supposed to be sleeping because there is a pretty high likelihood that they'll get overlooked.
For instance, sometimes I feel like my clients don't even sniff emails sent after hours and sending an email to a client after 5:00 is a good way to ensure you never get a reply as opposed to sending it when they are sitting in front of their PC and always call if you need an immediate answer from someone.
