I send emails at all hours, but I don't reasonably expect an answer until the next morning or Monday morning, if it's a weekend.

I used to work with people who didn't check their phones and email on the weekends. I stress used to as they are no longer with the organization.

That's the key. I understand people wanting to give the finger to the company--they're not paying me enough crowd. But the reality is if you don't do it, someone else will. Companies exist to make money. If your boss thinks that your refusal to plug in whenever has any effect on that--no matter how miniscule--he'll find someone else who wants your job.
If you don't like that, put some skin in the game and become your own boss.

Say it was to be on a Tuesday, he would send a voice mail with return receipt around 11:00pm on Monday night. He would always request info that had nothing to do with our activity. His reason was that the boys in the home office needed this right now.
We started our own "hot line" where first person to get the message would get the word out to the rest of us . He eventually got a promotion to the home office. He was not the worst manager I worked under.

I have a work provided cell phone and luckily they never bother me after hours unless its a huge emergency. It's ridiculous to expect a reply after 10:00 PM..
