We have a super bowl party and we all bring stuff. I wouldn't expect the host to have to clean up, etc. AND prepare a lot of food for some freeloaders to come in empty handed.
I don't think it's out of line to ask someone to bring something, especially if you mention it right away. Don't bother going, if you don't want to being in some celery and carrots. You don't have to bring food for 100 people, just really bring enough for you and your wife, perhaps a few more.

It’s a complete dick move to invite someone to the party and wait for their confirmation to tell them to bring food. If you are throwing a party then you provide everything for your guests. This isn’t Sunday potluck after church. Anyone contributing food/money should be considered a host, not a guest.
Even worse if he is hinting that you make a jambalaya. That’s a main course and is the thing you usually make to feed the most people. He’s basically asking you to take care of the food. frick him. I’d tell him I’m bringing a sandwich tray and stop at the store on the way to the party.

I'd get there, nobody else there. he'd get on the phone to everyone else then and tell them bring raw foods as I was there ready to cook.
The 1st half dozen times I was like WTF??? After that it was just yeah sure, know the routine now.
But like another asked earlier: He a bad cook or you just that good? Yep, bud was terribad and I am that good.
