Asian crawfish supply

Anybody know where Asian people get so much crawfish from? Every time I go to Houston for work I see multiple Asian crawfish restaurants. Are there many Asian crawfish farmers in Louisiana that only sell to Asians in Houston? Are they importing them from Vietnam or another SE Asian country?

No clue, but I will say that it it's apparently cheaper to send LA shrimp to China for processing and ship them back, than to process them in LA.

No. Texas has their own farms and aiming to dethrone LA.

For example, I go into a place called LA Crawfish, expecting to see a good ole baw working there. But all the workers are Asian and in addition to crawfish and po boys, they are also selling pho bowls.

Texas is getting water rights taken away every year. They had to cut rice production by 40k acres this year. Texas crawfish production is going to be less and less if this continues

Friend who owns a restaurant in houston (he was born & raised in morgan city), gets his supply from a local farmer in south LA.
Pays the guy to bring in thousands twice a week. He might pay an extra $1/lb of crawfish, but he surely sells it for more than that to offset.

There are tons of Vietnamese crawfisherman and farms in Louisiana.
There are also a bunch of Korean and Vietnamese farms in California (their season is July-October).

dunno his supplier, but my boy owns University Seafood near campus... he always has crawfish, and always good size...

LA is not the only state producing crawfish like 20 years ago. Once Asians got into the business the game has changed.

La and a little part of Texas around the Winnie area is the only states producing crawfish the ground elsewhere is not conducive for crawfishing

You think white crawfish farmers only sell to white wholesalers and restaurants?
They get their crawfish from south LA just like 99% of the other buyers in Houston

I’ve been to many Viet-Cajun restaurants while living on the west coast and yes the Vietnamese places are very good and usually stay busy. They definitely are a nice alternative if you live out of state and are craving crawfish, although the prices will be high.
