In my experience true Spaniards hate being called Mexican/Honduran/Guatamalan, Salvadorian, etc. I've never heard any Spaniards taking offense to being called Hispanic though.
And yes, they like Italians, consider themselves to be white. My grandfather is 100% Spanish and had light brown skin and very dark auburn/red hair. That's from millennia of being in Europe and mixing with northern Europeans at some point -- Red hair is predominantly a "white" feature & something almost unheard of in Central and South America.
There are the Canelo Alvarez' of the world -- but they are very rare. And even then, I believe Canelos parents both have French and Spanish ancestry

It depends. There are black Spaniards as well as white Spaniards.
One time my wife argued with me for over an hour telling me I was wrong for calling someone from Spain a Hispanic. She was adamant that only people from Mexico and parts south were Hispanic and no one else. Her argument was they were European. To which I said "yes they are, but they are also Hispanic". I had to wait on her to Google it for herself before she conceded. And she still tried to say Google was wrong for a while.

Mexico City, Puerto Rico, Argentina have a lot of light skinned people.
One of my buddies from Puerto Rico said the kids would pick on him for being light skinned.

I only know through work. I would say Hispanic and they would correct me and say Latino. That's because I also didn't want to just call people Mexican, most likely they were from Honduras or some other Latin American country.
