Sorry but I don’t know what to suggest, I’d seek counsel with an attorney conversant in these matters.
If you know anyone in the legal trade, now’s the time to ask them for a recommendation on someone expert on this situation.
Sorry to here of this, I wish you the best possible outcome.

You want to call their local community mental health center or community service board-whatever theyre called there. They arent these private therapist providers who pick and choose the easy cases they want to deal with. They are there and required by law to step in and help with this sort of thing.

no but coupled with depression one could reasonably consider suicide via starvation an at least get orders to bring them to an er for psych consult from a calling 911 for an ambulance standpoint

I mean you can call the cops, but they’ll just say you should call a therapist.

If she is fat, she can go days without eating. But make sure she is drinking gatorade for the electrolytes.
Get her arse outside in the sun. Or make her take Vit D3,
Also St. John's-wort and B12.

The SAMHSA looks ideal. And he can call it to get information on what to do with his family member which is cool.

Good lord how bad is your cooking?
On a serious note, if you think they are trying to off themselves get help.

If she won’t eat she probably won’t keep to a vitamin and exercise regimen.

Any drinking or pill problem?
Could there be?

The Cops wont do anything except maybe take them to the hospital but the hospital cant force them to stay if they don't want to. Also the cops won't take them anyway unless they're a clear and present danger to society or to themselves.
All of this.
If they're a danger to themselves, contact the coroner.

felt the need to tell me they have yet to eaten and have been starving themselves.
Sure they are not just on a fast?
There are multiple threads on the health & fitness boards about this. People love to tell everyone how many days and hours they have in.

As someone who has been in a similar situation. Definitely get the coroner to issue a CEC. It’s amazing what 14 days in an intensive program can do for some people.

If she can drink water, she can take a vitamin. Also I believe she has a job and goes to work, so she isn't bedridden.
St. John’s wort is most often used as a dietary supplement for depression. B12 is a nice "pick me up"

Do they have insurance? Call their insurance company. You MUST know the patient's SSN, birthdate, and (IIRC) their insurance member number. Explain the problem and ask for potential providers who can assist.
No. Just go to the ER or call the coroner like others have suggested.

You can call 911 to do a welfare check and let them know this person is at high risk for harming themselves, and that case the police (with an ambulance with them) have the legal right — and obligation — to detain him/her and take her to a psych ward for an evaluation. Your relative may only stay there for the night, but at least it is some type of intervention.
Sometimes you gotta play hardball. I went through a few bouts of crippling depression several years back and wanted everyone to feel bad for me. My wife (no pics) and made the call I am referring to above. Made me realize I had a very bad drinking problem and was moping through life with a “poor fricking me” attitude.
I hope things get better for you and your family.

They can go 14 days, wait it out.

If they have insurance, you can call the insurance hotline. They have counselors/therapists/doctors that you can talk to or do telemedicine/teledoctor appointments with. Best of luck to you and your loved one during this time!

You can always take to them to an ER. They have resources available for this kind of thing. It's quite common to see these people in ER. Good luck.
