It's because they have no perspective and have "big fish, little pond" syndrome if they were successful athletes in school.
And the context is important. For example, I was at LSU ROTC decades ago. It was near the end of an era that, if a cadet qualified he could attend Ranger School in lieu of advanced camp (advanced camp was sort of a mandatory basic training for officer cadets, but with evaluations which heavily influenced your selection for extended active duty, branch assignment choices, and so forth).
One of the cadets a class ahead of me qualified for this program. He arrived at Ranger School and they put all the cadets together for in-processing before distributing them to the various units within the school for the course (this was during the 65-day course period).
The cadets were from all over the country and took their APFT together. This particular cadet from LSU was a physical training stud. Built like a rock, indestructible, strong as a bull, but he wasn't very tall - he was like the comic book version of Wolverine. His "weakness" was the run. He crushed his usual 100+ push ups in 2 minutes, 100+ sit ups in 2 minutes and then ran a (fast for him) low 11 minute 2-mile run. He was the 73 of 75 cadets to finish that run, although his total score (extended range) was pretty good.
Sobering to say the least. Over 30 years, I served with very, very few guys who ran sub 11:00 2 miles (and 1 female). Must have been 60 or 65 who ran that day in 1 group to do it.

I posted this the other day, but I was a fairly highly rated foil fencer in college. I went against a member of the 1988 Chinese women's foil team. I got my arse kicked. I got ten touches on her to her 15, but I'm not sure how many of those were "pity" touches.
I'd say maybe, maaaaaybe 0.05% of the US population could even qualify for the olympics. And I'm probably being waaaaaaay to generous.

Even if we all took the Larry Hubbard approach, 99% of men would still struggle like hell to compete as a woman. Some sports such as track, swimming, diving, gymnastics, skateboard, none of us are ever standing a chance in hell. Even sports like tennis, volleyball, golf, most of us aren't standing a chance. Those teenage girls in China will absolutely embarrass us all in ping pong and badminton.
However, I threw the 12 lb shotput in high school, I do wonder if I were to throw the 8 lb like the women, would I be able to compete at all. I still doubt it though.

Only sport I’m confident in is handball.
1. The US sucks in it and has never medaled
2. Watching the gold medal match between Denmark and France...the sport takes no more than decent size, above average hand eye, and good arm strength to be competitive.
Now, if the US starts taking elite athletes from other sports then I would fall out rather quickly.

A lot of Olympic sports are obscure in the United States and take a backseat to talent rich sports like football, basketball and baseball.
How many 6'4'' 175-225 lb. basketball players might have been another Michael Phelps if every high school had a swimming team and the sport were as popular and produced the same amount of glory and opportunities as basketball?
But no one really gives a shite about swimming. You could host the World Championships of Swimming and no one is watching that shite. The only time people watch swimming is in the Olympic context (one meet every four years) and because the sport provides a ridiculous number of realistic medal opportunities.
But no one gives a shite about swimming because it's swimming. People watch the Super Bowl because it's football. People watch the Final Four because it's basketball. People watch the Masters because it's golf. People watch Wimbledon because it's tennis. People watch the World Cup because it's soccer. They don't watch swimming because it's swimming.
Now I'm definitely not saying any Tom, Dick or Harry could walk out and be an Olympian, but if talented athletes in the United States took Olympic sports as seriously as they do football, basketball and baseball, a lot of the Olympians probably wouldn't be Olympians.
Physical freaks don't want to compete in sports where they will be on TV about 2-3 times in their entire career and they won't make bank or become a household name unless they have GOAT level success. But in the United States, Alabama has a QB who's made a million dollars and hasn't even started a frickin' college game.
Who the hell wants to jump in a pool?
