Brain Damage/Eclipse is pretty much a religious experience.
However, I have always been partial to Fletcher Memorial Home in large part to Gilmour's solo.

The first solo in Shine On... is not Earth-shattering but it's beautiful and he plays it incredibly cleanly. Very difficult to do with all the bends and vibrato.
