I actually really like Zepparella's version of When the Levee Breaks. Check out John Campbell's version too.

Manic Depression - Robin Trower

I wouldn't mind hearing that one myself. Also the version that Jeff Beck & Seal did is possibly better than the original. Really kicks arse.

Others:
Tea for One - Joe Bonamassa
Shine On You Crazy Diamond - Col. Les Claypool's Flying Frog Brigade
Anyday - Derek Trucks or Tedeschi Trucks Band (take your pick)
Whipping Post - Frank Zappa
White Rabbit - Grace Potter & the Nocturnals
Bold As Love - John Mayer
Living for the City - Johnny Lang
Love Train - Keb' Mo'
Big Yellow Taxi - Keb' Mo'
Little Wing - Monte Montgomery
Positively 4th Street - Sue Foley
Angel from Montgomery - Susan Tedeschi
Gonna Move - Derek Trucks or Susan Tedeschi or both
Don't Think Twice - Susan Tedeschi
Everybody's Talking - Tedeschi Trucks
Oh You Pretty Things - Tedeschi Trucks
Dream On - Yngwie Malmsteen
Goodbye Blue Sky - Steve Howe
No More Mr. Nice Guy - Slash

Gov't Mule does a lot of good covers including:
Dark Side of the Mule (entire album is PF covers)
War Pigs
Third Stone from the Sun
Cortez the Killer
Simple Man
Masters of War -> Rockin' in the Free World

Umphree's McGee does tons of covers

Check out these compilation albums
Stone Free - Jimi Hendrix covers
This Is Guitar Gods - little bit of everything

You're very welcome! It's amazing isn't it? This song has been covered by everybody but this version stands apart.

Just an outstanding cover.

And I was never going to find it googling acoustic versions of All Along The Watchtower - which pretty much always leads back to Michael Hedges. Thanks again.

Which isn't a terrible thing. I liked his covers, and he was a frickin' genius on the acoustic guitar. His concerts were great.

Never got to see M. Hedges.

OP, these guys might not suit your (or your audience's) taste, but maybe something from Me First And The Gimme Gimmees?

They are sort of a punk all-star cover band and have a huge catalog.

Rocket Man

Other fun songs include:

Jolene
Mandy
The Boxer

Can't think of many off hand, but Ace Frehley released an album of covers a while back. Haven't listened to all of it, but the one's I've heard from it have been good. Has a cover of White Room that was good, a couple Kiss songs (not sure that's entirely a cover), few others can't think of off hand.
