Jerry got so that he could really bend his strings and get a lot of information (sounds) packed into a single note.
Some of his slow riffs are amazingly rich with vibration.

I would say Jerry because if nothing else, he had to completely reteach himself how to play guitar after his coma

Live Zappa shows he most certainly did improv, but I do agree for the most part even his most "spontaneous" sounding guitar solos, both in studio and outside studio, were composed.
Which I guess brings up the real question here: is genius more represented in Jerry's off the cuff legit improv style or Zappa's more rigidly composed (even if it doesn't sound like it) style.
I think Zappa. He could noodle out if he wanted to, but that was beneath him. And I mean lets be honest, you think Jerry could have written Inca Roads or Waka/Jawaka? That much complexity? Nah. But Zappa could sure as frick play any song in the Dead's repertoire, easily. Listen to the solo in It Just Might be a One Shot Deal and tell me Zappa couldn't play some country-tinged rock and roll thats right in the Dead's wheelhouse.
If we're compared just pure fricking chops, Zappa is better than Jerry. I'd say pretty much objectively, no argument, better.
If you wanna get into more vague "but brah Jerry had soul" sort of things to back up Jerry being better, eh, idk. Frank could bring the feels on a solo too. Black Napkins and Watermelon in Easter Hay being two good examples off the top of my head.
Idk I mean I guess personal preference is gonna come into play here, but I think Zappa is better.

It's not just playing the song, it's how its played. It's not just playing the notes, it's how they are played.
Frank and Jerry play two different styles of guitar.
There are a lot of cover bands (and the Dead & Co.) trying to imitate Jerry's guitar and they just can't pull it off. I can hear instantly that it is not him. His style is instantly recognizable and unique.
No major rock guitarist ever traversed as many different styles and idioms as Garcia (no, not even Frank Zappa). He was comfortable playing blues, folk, jazz, country, free-form avant-garde, standards, bluegrass, Motown, Latin, whaling shanties; you name it. Not only could he navigate through all those genres, he always sounded like himself when he did.
Two things to remember:
1) Garcia never tried to be a 'star' through his guitar playing. I envision his guitar playing having the same effect on the universe as Tom Bombadil's whistling.
2) Garcia never played anything that would be recognizable as Heavy Metal.

As an enormous Jerry Garcia fan I would say that Zappa was a hands down better guitarist. Both were genius but there was only one Zappa. Now as far as composing great melodies, Jerry may be the man there.

I remember at a Dead show in DC once they were handing out flyers for a Jerry vs Frank after party.
it was weird then, still is.
However, Frank is obviously technically more proficient but he doesn't have the soul Garcia does. I mean no one really does.
