Back in my younger days, I loved The Destroyer books, always thought they would make a great dark, violent, anti-hero movie or TV series. But Dick Clark got the rights and turned it into unwatchable, light hearted romp for the PG crowd. His vision of Remo Williams was horrible.

I dont think it is fair to fully criticize Mortal Kombat. Video Game Movie Genre was awful at the time. Street Fighter, Mario, Double Dragon, etc
Mortal Kombat embraced what it was and didnt stray too far from what it needed to do. Throw some fan fare, have solid fight sequences, a kick arse theme song, casting, and a slightly competent story.
Christopher Lambert was a fun/not serious Raiden and the veteran type needed to make the cast look respectable. Some people may have been upset about that but it lowers the tone of the movie and balances it out as not taking itself too seriously

Robin Shou was a perfect Liu Kang
Linden Ashby was solid as Johnny Cage
Scorpion
Sub Zero - biggest movie gripe was taking him out like a bitch with a bucket of water like the Witch from Wizard of Oz
Goro
eye candy
Veronica Vaughn can be my Sonya anytime
Talisa Soto looked damn near perfect at this time
The story is basically Enter the Dragon with some supernatural work in play which again works with this movie
IMO it is cheesy but very watchable and enjoyable cheese especially if you were a fan of the Arcades/Video Games
now as for that abortion Mortal Kombat Annihilation...that one always sucked. Even 8 year old me knew that was terrible.

i was all up MK's arse in those days and went to see MK2 in the theaters. first movie i walked out of
i was 14 and only lasted about 3-4 minutes of the opening sequence and my friend and i agreed to find another movie
i think we saw the jackal instead
