They are setting up the picture on most movies to take advantage of HDR on sets with enough nits to display it properly. The vast majority of TVs people buy simply are not bright enough. If you get a full white screen on my TVs it will literally hurt your eyes even with high ambient light. You really "want" a display capable of proper display of content mastered at 4,000 nits.
It is even worse with sound since the average sound system used with their primary display is even less capable than the display. Sound engineers tend to record sound to take advantage of high quality systems.

I don't use them, generally don't like them flashing across the screen. I find reading them takes away from actually watching the action on the screen.
The only time I used subtitles was when I was watching "Legend". A movie where Tom Hardy plays both parts in the Kray brothers, Reggie and Ronnie and his heavy British accent made the dialogue hard to understand and follow---especially when portraying the Reggie character who was mentally off charts crazy.
The second time I watched the movie several months later, I didn't use the subtitles and it was fine.

My past 3 girlfriends have all been latina so I had spanish subtitles on for them. I got used to it and kept them on for English and realized how much dialogue I was missing

Use 'em all the time now. Started with Peaky Blinders.

Ha. I just watched Pan’s Labyrinth for the first time a few days ago with, of course, subtitles required. I then watched Hostiles with Christian Bale last night. After 5 min of dialogue , I turned the subtitles on for the rest of the movie.
I definitely think it has something to due with as you get older, tones and pitches change in your hearing.

It defiantly has nothing to do with my amped eights in my Camero when I was young.

Change your gamma settings on your TV. Different apps do much better with different gamma settings. You probably need to set it to 2.2. Some TVs you can get away with BT 1886 (which is generally better) since they have preset sliders and you can adjust it. But normally its just easier to use 2.2 in a bright room.

I don't use them for sports, but I use them for everything else. I can't understand half of what people are saying in today's shows and movies.
Oddly enough, I don't have a problem hearing at the theaters. It's just at home.
One gripe I have though is the shitty quality of the subtitles themselves. Hate Netflix all you want, but they are the only streaming service that has excellent subtitles. No black box, shitty font, etc.
