Maybe he and SMG realized they had enough money to live on and be selective with what they did. Why not do something you’ve always wanted to do if the paycheck doesn’t matter?

Yep. Prinz and Gellar are pretty much the gold standard for we have a level of fame we are happy with when it comes to Hollywood.
Prinz working for the WWE as a writer was a life long dream, evidently he has been a wrestling fan his entire life. He got paid, probably quite nicely, to enjoy his hobby. That is not a bad deal.
As for hot start to an acting career that fizzled... I hate to say it but that has to be close to 90% of big name actors. For every Tom Hanks that has been in the limelight for decades you probably have a dozen or so Alicia Silverstones. Silverstone has worked constantly for decades but she's way under the radar now. Hollywood has a tendency to chew them up and spit them out.

On track to what? He's a working actor but I think people expected him to be an award winning actor after Whiplash. He has had 11 movies since Whiplash and the strongest one out of that crop is what...War Dogs?

Meg Ryan, as an example, stayed on top for a good long time evidently out of sheer meanness. She's supposedly as cuddly as a rattlesnake if you get on her bad side. as Tom Hanks noted in an interview "Meg is not perky folks."
She'd probably still be in the mix but for the failed plastic surgeries that left her looking like the Green Goblin.

Mark Hamill... The star of one of the biggest franchises in movie history, yet really did nothing else (in front of the camera) after that.
Henry Thomas, after ET you'd think he'd have been a huge star, at least through his teen years.
Ralph Macchio never became a huge star and didn't do much after Karate Kid (until Cobra Kai)
