I mean the nazis and hydra seemed obsessed with just the one. What exactly does each one do by itself.and the dude in gotg was obsessed with just the one. Thinking he could destroy the whole nova empire with it. What exactly does each one do?

Here you go
Film
The MCU incarnation of Thanos wielding the Infinity Gauntlet, with the six Infinity Stones
The Infinity Stones are significant in the Marvel Cinematic Universe, playing important roles in several films. Director James Gunn created the backstory for the Stones in the film Guardians of the Galaxy, where the Collector explains they are six singularities that existed before the Big Bang, that were compressed into the Stones after the universe began.[58] In order of introduction, they are:
Space Stone (Blue):
Housed in the Tesseract, it first appears briefly in the Thor post-credits scene. In Captain America: The First Avenger, it is used by the Red Skull to power weaponry developed by Hydra, and in The Avengers it is shown to be capable of generating wormholes, which Loki uses to transport the Chitauri to New York City in an attempt to conquer Earth. After the Avengers repel the invasion, it is returned to Asgard for safekeeping.[59] In November 2013, producer Kevin Feige confirmed that the Tesseract is the Space Stone.[60] Loki stole the Tesseract before Asgard's destruction at the end of Thor: Ragnarok.[61]
Mind Stone (Yellow):
In The Avengers, Thanos gives Loki a scepter that allows him to control people's minds and to project energy.[62] The scepter falls into the hands of Hydra leader Baron Wolfgang von Strucker, who is shown in the mid-credits scene of Captain America: The Winter Soldier to have been using it to experiment on humans. The only surviving subjects of those experiments are Quicksilver and Scarlet Witch, in whom superhuman abilities were unlocked. In Avengers: Age of Ultron, the scepter is revealed to contain the Mind Stone, and has an artificial intelligence that grants sentience to the computer program Ultron, who then incorporates the stone into his "Vision", an android.[59][63] The Mind Stone can also enhance the user's intelligence,[62] grants the user immense knowledge, and can create new life.[64]
Reality Stone (Red):
Formed by the Dark Elf Malekith into a fluid-like weapon called the Aether, it is said to be able to destroy the Nine Realms and return the universe to its pre-Big Bang state. The Asgardians entrust the Aether to the Collector at the end of Thor: The Dark World to separate it from the Tesseract, as they consider it unwise to have multiple Stones close together.[59][65][66] The Aether, when bonded with a host, can turn anything into dark matter, and is capable of sucking the life force out of humans and other mortals.[64]
Power Stone (Purple):
The Power Stone is contained within an orb that Ronan the Accuser seeks to find for Thanos in Guardians of the Galaxy.[67][68] It is capable of destroying entire civilizations, and Ronan tries to use it to destroy the planet Xandar. The Guardians of the Galaxy stop him and entrust the stone to the Nova Corps for safekeeping.[59]
Time Stone (Green):
The Time Stone was encased in the Eye of Agamotto by Earth's first sorcerer, Agamotto. A Master of the Mystic Arts can use the Stone to alter and manipulate time. Thousands of years later, in Doctor Strange, Dr. Stephen Strange learns to use the Eye and uses it to save the Earth from Dormammu by trapping the demon in a time loop until he abandons his plans for Earth. The Masters of the Mystic Arts retain possession of the Eye in their secret compound Kamar-Taj in Kathmandu, Nepal.[69][70]
Soul Stone (Orange):
The Soul Stone is shown in Guardians of the Galaxy to be orange.[71] In the second issue of the Avengers: Infinity War Prelude comic, Wong notes that not much is known about the Soul Stone.[72]

Probably what powers Wakanda.
Possible Spoiler (I'm just guessing):
That's why Thanos shows up there in the previews for Infinity War.

It's weird how so many stones end up on earth at one point or another. Will the vision die without the yellow stone? Seems like dr. Strange could wreck thanos by himself like he did dormamu. Also it's been awhile since ive seen Thor and the first avenger but I remember hydra finding the tesseract at the beginning of captain America first avenger. Why didn't the asgardians know where it was.

I thought the scuttle butt was that Heimdall either was the Soul Stone or had it somehow. That’s why he can see all souls and his eyes are orange.
Seemed plausible to me.

The other theories on that stone were:
Wakanda
Adam Warlock
I've found it strange that Thanos would casually give Loki the sceptre, when it contains an Infinity Stone. When Loki had the Tessaract also, he had 2 Stones in his possession. I thought Loki would have been somehow aware of how much power he had in his control, and would have been more powerful

I still think this is the most likely outcome.

Why does the red skull from touching the space stone. Is it the same thing that happens in gotg1

I’m not sure if Marvel intended it or it’s just worked out this way, but Lokinwas clearly in over his head in Avengers.
Did Thanos give him the scepter?

Black dude from Thor has it
How else could he see all trillions of souls in the universe and he has orange yellow eyes

You'd think then the black dude from Thor would've been able to hold his own more against his sister if he had an I stone

The Collector explains the infinity stones in GOTG: LINK
Basically, only beings of extraordinary strength can harness the energy of infinity stones.

Eta: I thought Ronan died because he tried to grab it and he couldnt where as Peter could of his celestial lineage not that he used the stone to personally destroy Roman. Ismt the collector kind of a bad guy?

He’s not a good guy, not necessarily a bad guy, unless you consider collecting living beings to be bad. But that’s his culture, and shouldn’t we respect his culture?
