I think Lonesome Dove gave us the best of Robert Duvall and Tommy Lee Jones, although both have been great in many other movies.

As far as pure dramatic acting and portraying a believable, relatable character,
I’d say Hopkins’ better role was in “The Remains of the Day”, but I loved him in “Lambs”.

I'm taking a little different route, the role that garnered arguably the greatest performance of 3 different iconic actors:

Joaquin

Heath

So many By Daniel Day Lewis.
.Bill the Butcher in Gangs of New York
Christy Brown in My Left Foot
In the Name of the Father
There Will be Blood
Nathaniel in Last of the Mohicans
Abraham Lincoln in Lincoln

He really does become the character. He also is great with American accents.

I know you’re joking, but Tim Allen played that role pretty well. He’s not exactly versatile, and that role was Taylor (intended) made for him. I wouldn’t disagree that it was his greatest work.

actually you caught me. I do consider it Tim Allen's best work but as I was thinking about it I thought, It would be funny to put Rickman and Sigourney here also as a joke knowing hands down they have both have way more iconic roles.
