Lightsaber color: blue or green?

Honestly, purple.

If I have to choose between blue and green, I’d take blue.

Blue for Obi-Wan in Star Wars and Luke in Empire.

Definitely red. By far the best

In Jedi lore, legally, Jedi were allowed to have red lightsabers and there was nothing the order could do to stop that.

However, it was greatly frowned upon because to turn a kyber crystal red would be to make the crystal "bleed" red like you would have when you lacerate someone. It's violence against the kyber crystal and hence why the Jedi never used red. That was confirmed by Palpatine in the comics when Darth Vader went to make his own lightsaber after Obi-Wan took his old one after their fight on Mustafar.

Ahsoka Tano got her current lightsabers when she reclaimed kyber crystals from Vader's inquisitors who were hunting down jedi. Those crystals were red and she healed them with the force, stopped the bleeding, made them white and built her new lightsabers around them.

I'd have to go with a rainbow lightsaber. Just to keep them guessing.

But if the wookies would let me hang with them, I'd go with brown.

Not insinuating that rainbow and brown have any correlation.

I like the black one that the Mandolorian guy had in Clone Wars. I think DartH Maul used it too. But was that a light saber? Be a huge advantage fighting in the dark..
