I think that was just the Uruk Hai. Those frickers were too hardcore for horses.

A Tolkien nerd can add to this, but...

I seem to remember the Tolkien world having a pretty high regard for horses in general. Almost like they were their own "people."

So for the most part, the horses of middle earth may have wanted nothing to do with the orcs as a rule. It may have just been too big a pain in the arse to get a horse to let an orc ride it.

We know it isn't a simple good v evil horse thing, because the riders and the mouth of sauron dude rode them.

Or that could all be wrong.

They were viewed as creatures of nobility. The Nazgul had corrupted some, but you are correct.

Moreso than the other reasons given, I think this is the answer.

Creatures of Middle-Earth fall on different sides of the good and evil spectrum just like the characters and races.

Spiders, wolves, wargs, crebain, etc are foul creatures and are thus on the side of Sauron.

Eagles and horses are creatures of nobility, and for that reason I don’t think they would ever side with orcs or goblins and let them ride. Nazgul are obviously a higher power and were able to corrupt those 9 horses into their “fell steeds”.

For what it's worth I think this is the main answer to "Why don't we just have the eagles solve everything?"

Other than because we need the story to happen there are two reasons I believe:

1) They are living creatures, they aren't invincible. In The Hobbit it's explicitly stated that they fear the long bow of sheep herders in the area. So it's not as simple as just flying over everything and finishing the mission. If they're worried about simple arrows they're sure as shite worried about what's in Mordor or Smaug.
2) They are very noble and proud, they can't just be ridden like a steed any time you need them. That kind of attitude would turn them against you if anything.

Not so fast on the crebain, at least from the book POV.

They are birds. It's stated that Saruman approached Radagast for help watching the area, and Radagast, having no reason to suspect Saruman's motives, set up a surveillance network of birds etc to report back to Saruman. They continued to do so afterwards, because they are just animals and only 'listened' to Radagast, who was out of the loop.

Re the horses of Rohan, in the books it was inferred several times that Rohan was being squeezed for horses as a tribute or bribe from Mordor, especially while Wormtongue was chief advisor. This was disputed at times, but clearly the Nine had horses from... somewhere.

Also regarding the horses in general, Middle-Earth was considered a way more primitive time, and things weren't universal as of yet. "Pipeweed" was a crop of the North, particularly the Shire; Saruman had it imported from there. The horses of Rohan were considered much more attractive and athletic than, say, Aragorn's horse from Rivendell etc. That's briefly described when the riders from Rivendell come south to talk to Aragorn after Helm's Deep.

It's also stated that Orcs are smaller in stature than Men, and not the only forces Sauron commanded. There was cavalry on both sides at Minas Tirith, in the books.

I never understood Sarumon just digging up his army. I still don't fully understand where Orcs come from.

Nobody does. In the LOTR Appendix it says Sauron's master Morgoth bred them from Elves he captured before the First Age. But even that is more of a myth than certainty. It may be that they were some animal that was imbued with wickedness and intelligence.
