When the deathly hallows are being explained and Harry asks if they're real to Ollivander, why has he completely forgotten that he owns and has used an invisibility cloak?

As far as Harry knew, invisibility cloaks like his were merely “rare” based off what Ron told him. Also, Harry is generally a bit thick.

Yep. There wasn't just one invisibility cloak. There were others, so as far as Harry knew, he just had a random one, not "the" invisibility cloak.
However, him not putting together that it came from Dumbledore and that it probably was said cloak, is why he is thick

Does anyone else get pissed off when they think "Why didnt Dumbledore just take of this shite himself?"

I mean really. He could have hopped on a broomstick, and dropped the ring into the lava of Mt. Doom himself. He didn't need to send Harry and the Hobbits.

This.
Especially for “the chosen one”
But then again, they had to make Hermoine look vastly superior in knowledge.

Because the hallows are explained to him by Luna's father who believes in random weird shite and he didn't quite believe him.
Ollivander knew about the unbeatable wand, but he didn't associate it with the hallows or know about them in the books.

Hermoine and Ron also had 11 years of knowledge of the Wizarding World and its history. Harry went from a standing start from when Hagrid knocked down the door on his birthday.

Harry wasn't "the chosen one" because he was the smartest or most powerful wizard.
Regarding the cloak, invisibility cloaks are relatively common items so Harry couldn't really have known definitively his was special.
There's a theory that Harry's DH cloak doesn't make him invisible like a disallusionment charm, but actually hides the wearer in the space between life and death similar to how Thestrals have their invisibility. The elder wand has a thestral tail hair core. And the theory is that the resection stone utilizes a therstral's eye.

Ron did. Hermoine came from muggle parents. She didn't find out until she turned 11, in which case she read every possible book in the wizarding world and wrote 68 essays, all 120cm length parchment.
And then waited a month before getting to King's Cross station to head to Hogwarts for the first time.
