Didn't the director, Taylor, also say that it would be tough to discern the days since they were so far north and light/dark would be longer?

Also, I have a hard time believing ravens can travel at 80 km/h and dragons only at 90 km/h. No way they're that close and no way ravens are that fast. ETA: maybe I'm wrong about the ravens.

I think 2 things are at play here. First these are magical undead, not viral undead. We've become accustomed to minor flesh wounds from a zombie meaning your death. At one point The Hound adjusted his glove like he had been bit and my first thought was "Oh shite they bit the Hound!" and then I realized this wasn't TWD and it just hurt a little.

2nd, they use weapons for a reason. I'm guessing they aren't that great at unarmed, hand to hand combat. Why would they drag Tormund away instead of stabbing him? I don't know, maybe the ones attacking him didn't have any good weapons? The 2 wights that took Jon under didn't attack him with weapons and then they fell in the water, they tackled him into the water. Maybe some wights have rusted out, inferior equipment?

He did. In hindsight all they really needed to do to solve this problem was show them chilling while someone commented on how long it would take the ice to freeze. Use this time to have a few more funny interactions with the group. A few minutes of screen time explains that it's been a multi day standoff rather than a multi hour standoff and we don't all start obsessing on something that should be rather unimportant, raven flight speed and how long it takes ice to freeze over.

I always wondered how the frick do ravens know exactly where to go? Do ravens know every individual in the land?

Yeah, the dragons, Unsullied and Dothraki would wreak serious havoc if ambushed, but if Dany were marching at the head of a parade, one archer would end her quest for the throne.

I remember a discussion about this related to one of the released chapters from Winds of Winter...it had to do with the ravens that were travelling with Stannis.

In the GOT world, most ravens have one route (or maybe its one "home" and have to be physically taken to other destinations, I can't quite remember). But there are some ravens that can be trained to deliver to multiple destinations, and these are considered more valuable.

So "sending a Raven to Daenerys" really means "releasing a Dragonstone raven" or "instructing an elite raven to go to Dragonstone".

If you want to get more specific, it's really a Maester thing, right? So it's maester at location X sending it to another maester at location Y. That's important because lords/kings/queens are often traveling.
