I'm trying to think of a way they could use the wall itself to survive an attack of a superior force from the south.
Not much comes to mind. Maybe if they had enough forewarning they could try to haul all their provisions and weapons to the top of the wall, retreat up there, lock out the elevator and destroy the stairs. But I doubt that would save them for long.

After the actions of the Night's King (the legend in the books, not the White Walker guy from the show), the lords of the North forbid the Night's Watch from building any defensive walls and structures on the south side of the wall so that it could always be accessible from the south in case another Lord Commander ever went crazy again. So the wall intentionally can't be defended from the south.

Stannis got his entire army to the North by boat. Certainly the men of the Vale could do likewise. Simply bypass the Twins and Moat Caylin.

They need a navy though. I don't think anyone has really opined on the Vale's naval strength to my knowledge.
