For football, I think it's Vick. Maybe Randall Cunningham if you go before him.
For basketball and soccer, the answer isn't nearly as exciting, when you push it to its extremes.
For soccer, Messi showed that you can be one of the smallest guys in the league and still be the focal point of an elite team. But Xavi showed you can be a small guy and not even a great athlete and still be the second in command of an elite team. It's certainly changed the types of guys who big teams went after for a while. Liverpool (and Manchester City before that) have brought it back to the elite athletes overpowering the highly skilled ones though.
Manuel Neuer also revolutionized the goalkeeper position by playing so high up the field.
The final part of the revolution is having defenders who aren't great defenders but just have elite abilities at playing the ball out of the back to the attacking players. It isn't all that fun to watch or impressive, but it's the soccer equivalent of shooting threes or dunking and ignoring mid-range shots and baseball players trying to hit a home run or walk every at bat.

Magic is super rare, too. And the 3 point shot was not a part of his game, really.
However, I have no doubt that Magic would be a superstar in today's NBA if he was 24.
Point guards are basically the same size now as they were in Magic's prime though. Giannis is the continuation of Magic, and he is amazing. But the way I look at the thread is which player changed the paradigm of a position. A once in a generation freak by definition can't change the paradigm because no one else can go and get a similar player.
Vick's speed was amazing, and while no one may be as fast as him at the QB spot, there are now tons of guys who run the ball routinely. People try and get a Vick, and while he is rare, he isn't as rare as a Magic or Giannis.
Look at the elite and promising point guards now. Kemba, Kyrie, Steph Curry, Damian Lillard, hell Trae Young is tiny. Ja Morant isn't a big guy. You've got Ben Simmons, but he is a big outlier and looks a throwback player in today's league. Jalen Rose did it in college but moved up a spot in the NBA. I'm probably missing some other guys, but I think Magic is just too much of an outlier.
Penny was a hell of a tall point guard 20 years ago but also not an elite three point shooter.
And the 2-4 spots are probably shorter now than they were when Magic played.

Would it not be people like
Durant - having that size and length mixed with his range. You’ve seen a switch in the last decade/decade and a half to teams trying have as much length as possible to become defensive nightmares
Legion of boom - I might be wrong but didn’t they kind of kick start the need for tall DBs? Going for guys 6”2 on the edge where as before it was assumed they would be too stiff
Maybe a guy like Patrick Willis bringing overall athleticism to MLB?

He's been hurt to start his MLB career but if Shohei Ohtani can get it together, he can def be that "new breed of athlete". If you don't count what Babe Ruth did in his early seasons.
