2008 Texas deserves a mention, as much as it pains me to say. 2008 was absolute chaos in the XII. Oklahoma, Texas, Texas Tech all were fighting for the conference crown as one was most certainly headed for the BCS title game.
Texas defeated Oklahoma in the RRS. Texas Tech defeated Texas. Oklahoma defeated Texas Tech. It was all about timing. All three had great offenses.
Texas likely gives Florida a better game than Oklahoma for the national title.
I know mid majors don’t count but 2008 Utah deserves consideration. I think they are the only mid major of the BCS era worthy of NC consideration.
Also, 2007 Missouri > West Virginia. There was a post earlier about WVU destroying OU which handled Missouri twice. In 2007, you can’t look at it like that. 2007 was the most unpredictable season of all time. Arkansas beat eventual national champion LSU. That same Arkansas got annihilated by Missouri.

That 2000 Miami Hurricane team was one of the greatest football teams I’ve ever seen in person. I know they had to fly across the country, but I still don’t know how they lost to Washington.
