Fourth and Long Gone, by former Ga Tech coach Pepper Rodgers. Written in the eighties but still relevant. Mostly about recruiting. Not great literature but I found it hilarious LINK

Focusing on any specific team? Here are a few I have.

A War In Dixie, Ivan Maisel and Kelly Whiteside. A history of the Iron Bowl.

A Tiger Walk Through History, Paul Hemphill. A history of Auburn football

SEC Football: 75 Years of Pride and Passion, Richard Scott. A history of the SEC.

Coach, Keith Dunnavant. Biography of Bear Bryant.

Damn Good Dogs!, Kent Hannon and Sonny Seiler. The story of the UGA mascot.

Bootlegger's Boy- Barry Switzer's semi-tell all. Its worth it just for his chapter on Brian Bozworth and The Boz.

Lou Holtz wrote a book called “Wins, Losses and Lessons” it was an autobiography. I read it in like 7th grade, decent book that covers his various coaching stints.

Agree with the poster who said Junction Boys by Jim Dent. He also wrote a great book called 12 mighty orphans but that is about HS ball.

I got that for my dad one year. He liked it enough that one time when I was at the parents' house he picked it up and said, "Somebody gave me this book, I don't remember who, but you might like it."

I'm tempted to give him Dave Campbell's Favorite Texas College Football Stories this year, since I'm interested in it.
