Imagine if LSU ran a similar offense.

I've said for awhile that we could run a WR in motion, direct snap to Fournette and zone read TO Guice for 75% of the snaps and be unbelievably good.

Yep. Except NFL scouts see him as a Guard at the next level and not a Tackle. As such, he will likely end up in the 2nd or 3rd round.
