Part of the problem is that there’s not nearly enough money to go around. Promises are being made that may or may not come to fruition. And it’s not just limited to LSU.
But yes, the portal, which is unmitigated free agency essentially every day, mixed with no regulation on paying teenagers, is a recipe for College Football‘s demise. I know I sound like a broken record, and many others have said this, but the pageantry College Football used to have is quickly waning. The NFL will be the ultimate beneficiary.

Done all the time. Get a better offer from another company, tell current employer that you have said better offer and if you are actually a commodity to the current company they may match or pay more than the offer.

Not a good analogy. In my world (IT), the "five-star" players are worth their weight in gold. There aren't that many of them, and companies that have them work their tails off to keep them.
And they don't take kindly to headhunters sniffing around to poach them, either. I know of several "consulting" firms that used to do good business, only to find themselves on the outs for trying to hire an IT star away from a company they had a contract with.
Joe Schlub 3-star network engineer, however, might as well be a commodity stocked at Walmart. His type is treated like they're are a dime a dozen, and not hard to keep (or get rid of, or replace if needed).
That's the better analogy.

What about enrollment dates and class schedules? I get the universities would just make that work, but I could see them getting sued by "normal" students for enforcing those policies. Might not win, but would be funny.

If he goes to a Power 4 Conference upper echelon team(Top 4) - he still looks like he physically (physique) like he’s overweight. Now I’m not saying he’s not in shape but no disrespect to Fla AM buts there’s absolutely no way he could keep up with intense speed of practice such as LSU or Alabama compared where he’s coming from. OL that is, different from skilled players. I remember seeing that Video clip of him pounding good DL in camps pre LSU and fell in love with him as a recruit. That injury he had early here really curtailed his career.

"College competition" band members on scholarship freely transfer all the time without sitting out.
"College competition" sport coaches do, as well.
What is the difference?
