There is probably a rule about non running vehicles parked on the premises. Somebody complained about your beater truck and the HOA wants to verify that it is or isn't a running, driving, registered vehicle before telling you to get your POS truck off the property or in the garage.
Your truck may be mint condition but some folks think any 20 year old truck that is seldom driven is a broke down POS

I would tell them that my vehicle's registration is none of their fricking business and to go frick themselves with a loaded shotgun then come try and take the registration from me.
Seriously, frick HOA's. frick them to hell and back. Nothing but a bunch of soyboys and their single, elderly moms running those things drunk on "power".
When I lived in a subdivision years ago I painted my house. Before starting I had to give them a sample of the color I was going with. I get that, they just didn't want me to pain my house watermelon pink. No problem.
Then, I paid $2,500 for a patio cover over my back patio, out of sight from the road and they got pissed that I didn't ask for permission before doing that. I explained to them that they were more than welcome to come dismantle it themselves if they could dodge bullets for destroying my property without permission. The head of the HOA there was 28 years old and he was easy to intimidate. Told him to kindly go frick himself and that I would do what I want in my own back yard.
Never heard another word from them.

I'd demand from them a personal guarantee of confidentiality and privacy of personal data from the person demanding the information and each board member and person who has access to your information with a minimum of $25,000 per breach and/or disclosure. I'd also demand written notice of each and every person who reviews or access the data. After you get that then you can ponder the production of the registration. Until you get that in writing to your satisfaction I'd tell them to suck it.

they may want your registration re: a prohibition against multi-family households. there are usually requirements of keeping vehicles in garages, but the registration doesn't say anything about that. or a commercial vehicle prohibition, as someone else pointed out.

Funny thing is...the VP knows exactly where I work. He tried to get me hired on his company a while back (before he was elected to the Board and was actually a nice guy). He knows we don't have "company trucks" and it would have government tags on it if I did.
Something smells with the way they are adamant about getting a copy of my registration. That's why I asked if they can do anything with it (like tow my property from my residence/land).

first neighborhood i lived in they would cruise up & down the street and flag any vehicle with an expired brake tag even if it was someone visting me.
I love that I can do whatever the frick i want with my house and land now. No HOA for me ever again.

I would ask to see the registration of all of the other vehicles that they have copies of.

Have you asked your neighbors if any of them have gotten similar requests?
If it's not in the bylaws, then there can be no penalty for noncompliance. So I would tell the HOA management company that they have received everything that they are going to get, unless they can produce, page and verse, where in the covenants you have to provide this information.
I am sure they have a reason for asking for this... but they may not have the authority to ask for it.
Also, HOAs can do some good... but many of these management companies, I swear they must get paid for every letter they send out. Little Napoleons, all of them.

This, if there are C&Rs specifically stating commercial vehicles are not permitted in the neighborhood to be kept outside of a garage.

They have been very evasive with their answers via email. So I have to request a formal hearing in person to get to the bottom line. I will have to record those conversations.
When people are leery of putting stuff in writing for official business, it causes me to question their motives.

They get commissions and can charge expenses(mailing letters).
The management companies are what really give hoas a bad name and cause dues to be stupid high.

My HOA has rules against on street parking. They want all cars in driveways or garages. They just might want to know what type of vehicles the homeowners have Incase the vehicle is parked in the street.

don't know why they would need the registration. I have heard that some HOA's are installing license plate readers as a deterrent, so they would need residences plates .
