I usually get the 93%. Sometimes if that's out I'll get the 90%, but only do that occasionally and it's the lowest I'll get.

96/4 or 97/3. no fatty ground meat for this guy.

In the UK the did the fat % different so when I lived there we usually got the 10% or 15%.

What is the benefit for you guys that buy from a farmer?
Does it taste better? Is it cheaper? Better quality meat? All for the relationship with your farmer?

The benefit is to know what you are actually getting.
Go check out a feed lot. It is horrific
That depends. The animal is usually kept in better conditions translating to the meat almost always being better. If you can't afford a whole animal just get someone to split it. Often people will get a half or quarter beef.

buy a cow for ground meat is not worth it. buying a cow for some ground meat and the steaks is where it becomes worthwhile.

I posted earlier in this thread and mentioned that the relationship is a big part, but additionally:
1.) Depending on the farmer, the meat can be much better
2.) I get things that are hard(er) to find at the store (knuckle bones, marrow bones, oxtail)
3.) I can customize everything, including size of ground beef packs, thickness of steaks, roasts used, etc
4.) They deliver and I like having a full freezer on hand
5.) I support grass-fed beef for a wide variety of reasons including health and sustainability
