Few questions in order to provide my thoughts
1. where are you in your training plan? what's your weekly mileage now and what will it be that week with a 31 mile run?
2. 4.5 hrs to run 31 is 8:40 pace. why would you be planning for that pace?
3. if you just have obligations that don't allow for one long run otherwise what is your reasoning for thinking breaking it up is better?

This week I'll be around 46 miles, the 31 mile week I'll be at 54, I've been pretty good on training so far. (this Saturday is 20, next week backs off the week stuff a bit)

Just an estimate, I'll probably be closer to a 10:00 - 11:00 pace for it depending on how I feel. I didn't really calculate how long it would take, just made a quick estimate (and wasn't behind a calculator) I've also only ever run 26.2, so this will actually be my first foray into an ultra distance

I know for marathon training they usually say not to run longer than 3 hours... So really just new to such long training runs
ETA: I would prefer to do it all in one go, will probably wake around 4am and try to knock it out and get home.

Forget what you know/think about marathon training for this. Pace, effort type, fueling, mental challenge is all different. For these long training runs think of them as time on feet and a chance to figure out your fueling plan. If you can work it time wise to knock out the 30 miles in one go that is probably the better option if not plan on 20 sat and then 15 sunday. For pacing/effort level think back to how you felt after your marathon. Were you sore, beat up, fatigued for the week or ready to run the next day. you ideally want to get through it and be fatigued but ok to go knock out a 10k the next day no problem. Work in some walking at min 15:00 pace. You'll walk way more than you think so practice and get comfortable with that pace. I'd say give yourself closer to 6hrs.
you also still have a couple of months for productive training so if you get to mile 25 and are just really dragging arse, call it a day and go back out sunday for 8-10. no reason to completely drain yourself for the last few miles and then have to take multiple days off. By mid-late sept you may want to be hitting 70 miles a week for 2-3 weeks in a row.

Yes - late September I have a nighttime 20 miler with a 20 miler the next morning (that week is 61 miles), 2 weeks later I have a 50 miler long run with that week being 72 miles, and 2 weeks later I have tentatively put another 20 mile nighttime run in on a Friday with a 25/30 mile run in the next morning which will put me at 73 miles for the week.
I've tried to have my "big" weeks spread out with a rest'ish week in between to let me by heal since I'm not used to these distances.
2 weeks before Tunnel Hill I have a 45 mile week (long run 20 miles).
My idea for the nighttime runs came from discussions with some Ultra Runners around my area (one fairly famous one - Micah Morgan, a member of the USA 24-hour Team). All the coaches I've mentioned it to have all been shocked I came up with it, without being told

I've been practicing my "all day pace" a lot lately, I expect that training to keep getting more and more as November approaches, for instance today:
Kept my heart rate super low the whole time too, practice the "fast walk" anytime my heart rate would start climbing above 138 (probably about 5 times on this run?)
Also for my Marathons - absolutely would not say I could do anything for at least a week after them - but my Marathon pace is around an 8:45 / 8:50 pace, I do not plan to get anywhere close to that pace lol

More power to ya. I just don’t have the time to train for stuff like this. There’s a 6 hour “ultra” here in September on a 2.5 mile course I’ve looked at, but I’m doubtful I’ll sign up.

I've started noticing a lot of triathletes do this "Brick Workout" - what exactly does it mean? (Was going to ask you on Strava but since you put it here lol)

Two workouts back to back with no rest (except transition time).

My bike group (C) didn’t show today for the 35 mile ride, so I just stayed on the trace for the whole ride and threw on my running shoes when I got back to the truck. There’s a local sprint tri in October I may sign up for. I’ve never done one. Should be interesting…

45 mile week!! Mileage is ramping up quick. Will have a big week next week and probably pull back to heal the next (think my training has me doing that anyways)
With this training; at least early on, it appears to build for 2 weeks and then cut back a week. I think because there isn't a great "natural" way to build to 70 mile weeks without months and months of "pre-training"
Luckily my peak weeks in the spring were 50+ so next week is me just kinda catching back up. It's also forcing me to slow WAY down because of the faster onboard (and not the typical 10% I'm used to)

Unless it’s a race, the lowest number between Apple/Strava/Garmin/gym timer is always what gets logged.

Felt pretty good actually, went for a 5.2 mile run well below lactic threshold (10:04 min/mile) - today is a rest day just so I can "heal" but I could probably go out and run 10 - 15 miles today if I kept it under LT again.

No, it was with the local running group so we had water stops along the way - I stopped 3-4 times to grab some water and bring my HR back down (was averaging 8:40 the first 14 miles; was hanging out with the wrong people haha)
It was 3:00:18 running time - 3:09:02 elapsed time if you take out the time I was standing around after my first 2 miles (ran 2 miles to start and then stood around for 15 minutes waiting on everyone to get there)

To answer your question, not this year, just Tunnel Hill for me (the weekend after)
ETA: I didn't do the full, was pacing someone (like you were) for the last 31 miles
