H/F favorite healthy meals/recipes

Have we had one of these?

I know we all get in ruts with cooking, so I think sharing healthy recipes with other like minded individuals could be helpful.

Now for this to work, we would have to keep all the "my diet is better than you diet" bullshite to a minimum, ok? No keto, paleo, whole30, low carb, etc debates. If you don't like the recipe, don't cook it. Ignore it.

I'll start:

Sous vide pork chops
Bean salad
Sprouts

You don't have to sous vide, grilling would just fine, but this is a super simple and quick meal for weeknights that we make quite often.

Pork chop
- season and grill or pan fry as you wish

Bean salad
- 1 can of any bean you like (wash and rinse)
- finely chopped red onion
- chopped green of your choosing (I normally use kale)
- make a simple vinaigrette to taste (olive oil, apple cider vinegar, salt and pepper)

I like to garnish with raw sprouts if I have them

I like veggie pizzas and strawberry hulk's. Sometimes I'll add lettuce to my sandwiches.

we're big whole 30ers. so a lot from that cookbook.


we do zoodles a ton with with HEB organic marinara




chia pudding




chicken and roasted veggies




chicken thighs and zoodles or cauliflower rice



turkey burger wraps.



honestly, i've loved about 90% of the healthy eating we've done in the last few years. i just really love pizza, beer, and burgers more.

I tried the "zoodles" things. Just did not like it. The texture was always too much to overcome for me.

I've made spaghetti with spaghetti squash that wasn't bad though.

how did you cook it? we do sesame oil and cook till it's as soft as a noodle. most things we do on a diet, i'd trade the real thing for in a heartbeat, but well cooked zoodles is no better than spaghetti to me.

Here is something that I threw together this weekend

Vegan kale and lentil soup

- homemade vegetable broth
- carrots (diced)
- celery
- cannellini beans
- french lentils
- kale

Saute carrots and celery in olive oil to soften. Add vegetable broth. Bring to boil. Add lentils. Boil for 15 minutes. Add cannellini beans (washed) and chopped kale. Cook for 5 more minutes. Season to taste.

I like to add garlic chili paste for a little spice.

Quick and easy.

Egg Roll in a Bowl.



1 tsp. coconut oil
1 lb. ground pork
5 minced garlic cloves
1/3 cup coconut aminos
1 tsp. freshly minced ginger
1 tsp. rice wine vinegar
1 tsp. sesame oil
1 10 oz. bag coleslaw mix (shredded cabbage and carrots)
sliced green onion & sesame seeds, to garnish

Melt coconut oil in a wok or large skillet over medium heat.

Add pork and cook until browned, using a wooden spoon to break up.

Combine garlic, coconut aminos, ginger, vinegar and sesame oil in a small bowl.

Add sauce and coleslaw mix to browned pork and stir. Reduce heat and cover; cook for 15 minutes or until vegetables are soft.

Garnish with green onion and sesame seeds.

I've done those a few times with cottage cheese. The texture is a bit weird, but overall I enjoyed them.

Need to do those again.

I've done this, and while the flavor of my food comes out well, the texture just doesn't give me that "pasta fix". So I'm trying zoodles this weekend.

Also, I've recently discovered 90 second bread made with almond flour. Its easy, and a great bread replacement if you are cutting carbs.

I've started low carbs for the first time in my life a few days ago. It hasn't been too tough so far. I'm still trying out replacements for milk. I gotta have something to drink with my PB.

Received and Instantpot for Christmas this year, so I've been experimenting with that, as well.

Made the egg roll in a bowl tonight

With a dab of fermented chili paste and used carrot and broccoli slaw and added some kale

Good stuff. Will make again

I'd rather just measure out 2oz on my scale and bulk it up with protein and veggies. Pasta substitutes aren't for me.
