Gumbo and Keto

I've been on keto for a few months now. I'm enjoying it greatly. I'm doing <20g of carbs everyday but my question is regarding gumbo. Obviously no rice which is fine by me, but how much should I be concerned with the roux?

Would a bowl of gumbo throw me out of ketosis? Worth it? Part of me wants to avoid it altogether, and the other part of me says have it in moderation with no rice.

I can do a keto-frindly roux at home for myself, but I'm inquiring more for when friends and family make a gumbo.

In one big pot of gumbo you may only use 1 cup of flour. That 1 cup is dispersed a good bit throughout. I would imagine less than a tablespoon intake for a bowl.

Fast and do some low cardio.

Enjoy.

I love one meal a day now. Eating 3 times a day is an unnatural culturally formed habit. And once fat adapted I don't need or miss the other two meals at all. Don't even think about it.

Anyway, that's how I stay in keto and still eat what I want. Well that and my normal diet is very low carb and I drink beer hardly ever.

If you’re worried about the carbs that you’ll be adding to your daily intake, up your fats more than normal.

I know people don’t want to hear it but keto is not “low carb.” It’s 80% fat, 15%, and 5% carbs of your total daily calories.

You can make gumbo with no roux at all. Takes some practice but you brown a shite ton of okra and let it scorch. It'll thicken up. My father-in-law is a big keto guy so sometimes the MIL cooks it and you can't tell there's no roux.

It's very low relative carb compared to other macros esp fat. And unless you're gorging yourself uncomfortably and constantly then that means it's also absolute low carb compared to population.

Yes...but most people think they eat low carbs under a set amount that their body will be in ketosis...not true. The amount of carbs are based off the total amount of calories that have been ate that day as well as maintaining 80% fat and 15% protein.

Following his <20g a day would put him at <5% carbs of a 2000 calorie diet.
Now, is he eating that many calories? Is he eating 75g of protein? Is he eating 180g of fat?

Just keeping low carb does not mean you’re in ketosis.

So is air conditioning, and electricity and cell phones. Just because something is natural does not make it good. Just because something isn’t natural does not make it bad.

For the record, I made a pot of gumbo using roux made with Redmill low carb baking mix. It is mostly almond flour. It was one of the best pots of gumbo ever. But, a regular pot of gumbo is not that high in carbs overall to begin with. I only did this for a friend that was afraid of getting out of keto.

My gut feel is if you’re doing keto or low carb for non-diabetic reasons the occasional cheat meal isn’t going to hurt your long term goals.

The key is then to have the willpower to keep your overall dietary balance in tact. The human body is more than well enough to handle one “non-optimal” decision, it’s the 78 bad decisions in a row that lead to a bad time.

Eat a bowl of gumbo - heck make a pot. Just don't make it a habbit as mentioned above.

In the past, I've made my own chicken stock, cooked down all day satuday, sunday I put the rest of the veggies/chicken/sausage whatever in and cook down some more. It isn't gumbo, but it works.

If ketosis is the goal...your body is using fat as a fuel source. Yes, an imbalance of nutrients will throw him out of ketosis and, he will have to go a few days switching back to ketosis.

If just eating low carbs is the goal, no then upping the carbs for one day isn’t a big deal.

The extent and duration of that throw-off varies pretty widely among people, based on many many factors, and probably a lot of genetic shite we don't even know about.

My mantra lately is, "there are a lot of ways to reap the benefits of beta-hydroxybuterate," so I don't really go by a monolithic "keto diet."

But I definitely eat WAY more fat than most people would ever believe (although public perception seems to be changing re fat), and unless I specifically glucose load for a high-intensity workout or event, I am almost always burning fat (colloquially speaking) as my primary fuel source. I can't remember the last time I counted macros. I just have selected staple foods and formed habits that keep it close. Throw in a quartely 72hr fast, my modified OMAD routine (sort of 20-4 If), and regular aerobic range exercise, and I seldom dip below 0.7 mmol/L and can easily hit 2+ (although the body does adjust after long periods of ketosis, to make closer to what you need).

I'm rambling.

Anyway, yes it's more than low carb, in many ways.

Wife started making coconut milk rice w TJs riced cauliflower. You don't really taste the coconut esp in something strong like gumbo, but it makes it stickier and more rice like.
