Roller Coaster Tycoon IS on iPhone. I've only played on PC, but the mobile version does have good user reviews, so it's probably worth the $6 price.

I play Simpsons Tapped Out some. It’s a little like Sim City in that you build Springfield. It also has roller coasters in Krustyland.

Polytopia is a good hidden gem. It’s similar to Civilization and has online play but you have to purchase one civ to unlock it. Single-player is still a lot of fun.
