Ninja blender with food processor bowl. Great blender, small cups for individual smoothies/drinks, and I don't need a separate food processor.
20 qt Le Creuset stockpot. Great for big batches of gumbos, chilis, soups, and stocks.
We recently got a Cuisinart mixer and a bunch of attachments as a wedding present. I've never been much of a baker but I look forward to trying new things with it.
I also have a 10 inch Global chef's knife in the mail that I expect will make this list as well. Love my other Globals.

Hate going to the in-laws to cook because they dont have a single sharp knife or a knife sharpener in their house.
It does bug the crap out of me when there isn't a sharp, smooth bladed knife in the house. Then you wind up using a serrated knife to saw your onions and peppers apart.

do you even ceramic?
you can pick one of these up at target or walmart for $10 and it will never dull. fantastic for chopping veggies and other stuff. i actually hide mine because i'm afraid it will get abused.
just don't drop it.

I use my instant read thermometer all the time - love it.
As for the dull knives in foreign kitchens - I ALWAYS pack a good knife when going to a camp or beach condo where I'll be cooking. In fact, I started packing an essential travel kit for those situations (knife, seasoning, thermometer, thick bottom pot). One common factor in all beach condos - dull knives, crappy non-stick pans that are torn to bits, and 16 pairs of tongs.
